I bought a juicer and am going to begin juicing fruits and veggies. I would like to do as much ahead of time so I do not have to clean the machine as often but I do not want to do so far ahead that I lose the nutrients. So need to know how fast carrots, orange and grapefruit juices begin to lose their nutrients when stored in the 'fridge.
How long I can store fresh carrot, orange and grapefruit juice before they lose any of their vitamins.?
Fair question. Unfortunately they will start to lost some vitamin efficacy from the moment you turn on the juicer. From a practical standpoint you probably have a few days if the juice is kept in the refrigerator.
Two other points you should be aware of"
1. The answer above depends a great deal on which vitamins you are talking about. For example the fat soluble vitamins (A D E ) are stable for a long time. Vitamin C on the other hand degrades fairly quickly.
2. Assuming you are not blanching the juice, be aware that you have released a huge amount of enzymes by disrupting the cells, and have not inactivated any of the enzymes. The net effect of this is that some enzymes will degrade or interact with the vitamins. Also some enzymes will cause off flavors to develop after a few days.
Having said all that, it's not meant to discourage you. Fresh juice is pretty good for you and it taste very good. So go for it.
