Anybody know how to make HEALTHY orange chicken?

I am crazy about orange chicken but not exactly crazy about how much fat or calories is in them. Does anybody have tips or a recipe on how to make orange chicken healthy? (If possible, with real oranges instead of artificial flavoring?)

Here is a healthy quick dinner recipe that is simple to prepare, then cooks quickly in only 15 minutes in the oven while you prepare a box of rice pilaf and green vegetable. This healthy quick dinner recipe will help solve tonight's dinner crisis and provide you with a winning entrée fit for a company meal. As a bonus, it can be halved or expanded to fit the number of servings needed and uses only one bowl and one baking dish, so cleanup is easy.





If you're a dark meat fan, you could also use chicken thighs and legs for this recipe, but you would need to adjust the cooking time accordingly.





Healthy Quick and Easy Orange Chicken Dinner 4 chicken breast halves, skinned and boned





2 tablespoons butter or margarine, melted





1/2 teaspoon paprika





1/4 cup finely chopped onion





1 teaspoon salt





1/4 teaspoon dried rosemary, crumbled





pinch black pepper





1 cup orange juice





grated rind of 1 orange








Preheat the oven to 350 degrees F.


Arrange the chicken breasts in a 13x9x2" baking dish


Drizzle the chicken with the melted butter and sprinkle with paprika.


Combine the remaining ingredients and pour over the chicken.


Bake uncovered for 15 minutes, until fork tender, basting occasionally with the pan juices.


Serving Suggestion: Serve with a wild rice pilaf and green beans or a salad.

2 tablespoons butter or margarine


1/4 cup onion, chopped


1 1/2 cup orange juice


1/2 teaspoon leaf tarragon, crumbled


1/8 teaspoon pepper


salt (optional)


1 cup evaporated skim milk





Directions:





Flatten chicken breast halves. Saute in butter in large skillet over medium heat until browned and cooked through (about 8 minutes). Remove to platter, cover and keep warm.





In same skillet, saute onion until tender but not browned. Add juice, tarragon, pepper and (if you feel it necessary) salt. Stir in milk; cook, stirring constantly until hot and slightly thickened. Spoon over chicken and serve.

Roasted Butterflied Ginger-Orange Chicken Recipe


* 1 whole frying or roasting chicken (preferably organically raised or free range)


* 4 inch piece fresh ginger root, grated


* 1 orange rind (preferably organically grown), grated


* 1 tbsp. melted butter or olive oil


* 1 tbsp. honey


* sea salt


* Preheat the oven to 300°F


Remove the neck, gizzards %26amp; liver and wipe the chicken inside and out.


With a sharp knife or scissors, butterfly the chicken by cutting through the skin and ribs along both sides of the backbone. The backbone, neck %26amp; gizzards can be frozen and used to make stock.


With breast side up, open out the chicken and press firmly on the breasts to break the breastbone. Place on a rack in a roasting pan. Press flat and tuck the wing tips under the legs.


Mix the grated ginger, grated orange rind, butter, and honey together and rub into surface of chicken. Sprinkle liberally with salt.


Place on lower rack of oven and bake for 40 minutes. Raise temperature to 375°F and bake until golden brown (about 20 minutes).


Baste with pan juices several times during cooking.


Serve with steamed vegetables and long grain brown rice or coconut rice.

Apple and Orange Chicken [4 servings]





1 (1 ounce) package dry onion soup mix


4 bone-in chicken breast halves, skinless


1 (.6 ounce) package cream of chicken soup mix


2 tablespoons soy sauce


2 cloves crushed garlic


1 cup apple juice


1 cup orange juice


salt and pepper to taste





Preheat oven to 350 degrees F (175 degrees C).


Place the chicken pieces in a lightly greased 9x13 inch baking dish.


In a medium bowl combine the onion soup mix, cream of chicken soup mix, soy sauce, garlic, apple and orange juice, salt and pepper. Mix together and pour mixture over chicken. Cover and bake in the preheated oven for 1 hour, then remove cover/lid and bake for another 1/2 hour to brown the chicken.
