How do you make orange onions?

how do you make those orange-coloured onions (the kind you get at indian restaurants) which i assume are soaked in vinegar sauce? there is usually a jar of thes types of onions on the table along with the pickles, salt, pepper, etc. I want to know how these orange-coloured onions are made.

Reply:Sweet Onion Salad with Onion-Orange Vinaigrette


Dairy-Free, Vegetarian





Serves 6


A spring-y, zesty way to take advantage of fresh oranges and spicy-sweet onions.





Salad


1 large head butter lettuce, torn


2 cups fresh baby spinach


3 large navel oranges


1 sweet onion, peeled


3 apples, cored and diced


2 TB sesame seeds, toasted


4 rounds pita bread, cut into wedges and toasted





Sweet Onion-Orange Vinaigrette





3 TB orange juice


1/8 minced sweet onion


2 TB white wine or champagne vinegar


2 tsp Dijon mustard


2 tsp honey


1/3 cup canola oil


Put greens in a large salad bowl. Peel oranges over medium bowl to catch the juices; cut between membranes to section. Reserve juice for vinaigrette; add sections to salad bowl. Mince 1/8 sweet onion, reserve for vinaigrette. Cut remaining onion into thin slices. Add onion and apple to salad. In a bowl, whisk together the orange juice, sweet onions, vinegar, mustard and honey. Gradually whisk in oil until well blended. Toss salad well with sweet onion-orange vinaigrette. Garnish with sesame seeds and serve with toasted pita wedges.
