Why do flavorings , like orange extract, have to contain so much alcohol?

The orange flavoring I bought has 79 % alcohol in it.

Why do flavorings , like orange extract, have to contain so much alcohol?
A lot of flavorings are not soluble in water and you have to use alcohol to get the flavor out. Most of the alcohol is going to be cooked off when you use it, so it won't taste like alcohol in your finished product
Reply:If you don't want that in the dish just use the rine scrapings off a peel.
Reply:Many flavors are not soluble in water but ARE soluble in alcohol. It helps to preserve it as well!

most likely you will cook it and evaporate 90+% of that teaspoon or less..

Reply:Chill. If you're gonna cook it, most of the alcohol evaporates. Besides, you're not using much. What, a teaspoon or two?
